Similar to barley, wheat is passed through steeping, germination and kilning to produce a clean well modified high-protein malt.

White Crest Wheat Malt will increase head retention and foam stability. It can be added up to 5% of the total grist to most light beers to increase foam without affecting haze. It gives bready, citrus and creamy notes to your beer. Wheat malt is huskless — therefore the higher the addition, the greater the risk of slow run-off.
